Whole meal spelt flour is a type of flour made from the entire spelt grain, including the bran, germ, and endosperm. Spelt is an ancient grain that is related to wheat, but it is more easily digestible and has a higher nutrient content.
Whole meal spelt flour is a good source of protein, fiber, vitamins, and minerals. It is also a good source of gluten, but spelt gluten is less elastic than wheat gluten, which makes spelt baked goods more tender and crumbly.
Whole meal spelt flour can be used in place of all-purpose flour in most recipes. However, it is important to note that spelt flour absorbs more liquid than all-purpose flour, so you may need to add a little more liquid to your recipes when using spelt flour.
